Easy Emeril Beef Barley Soup Recipe

DaRecipe – Easy Emeril Beef Barley Soup Recipe – I make a terrific turkey rice soup and many love it, but I heard yesterday after dinner and seconds and thirds were being enjoyed, that this Beef barley Soup beats the Turkey Rice hands down. I did start with leftovers from our pot roast the night before, but there wasn’t enough for a second meal, so I opted for the beef barley soup, yours!! Outstanding!! I was asked to bag and freeze the rest, because my wife knows of friends and family that will want to try it, and so it goes!!

Ingredients

  • 2 lbs beef round steak or 2 lbs beef chuck, diced
  • 2 cups chopped carrots
  • 1 stalk celery, diced
  • 12 green pepper, diced
  • 1 large onion, chopped
  • 1 (16 ounce) can tomatoes, cut up
  • 12 cup frozen corn
  • 12 cup frozen green beans
  • 23 cup barley
  • 1 tablespoon dried parsley flakes
  • 1 tablespoon beef bouillon granules or 2 beef bouillon cubes
  • 2 teaspoons salt
  • 34 teaspoon dried basil
  • 5 cups water

Directions

  1. In skillet brown beef.
  2. Place carrot, celery, green pepper, onion, corn and green beans in crock pot.
  3. Put meat on top.
  4. Combine tomatoes, barley, parsley, bouillon, salt and basil.
  5. Pour over meat.
  6. Add water.
  7. DO NOT STIR.
  8. Cover and cook on LOW for 10-12 hours.

 Tip

I must agree with a couple of posters and disagree with some others. I’ve been making this Easy Emeril Beef Barley Soup Recipe [very similar] soup for many years and yes, I always do mine [slow boil] on the stove, tastes a lot better and takes a lot less time, about 1&1/2 to two hours only. Also, absolutely do brown the beef first, the browning tidbits add a great deal more taste to the soup. Then, instead of 5 cups water, I always use “Knorr Homestock Beef boulion” [add one to 3&1/2 cups boiling water] then add two cans of “Campbells Beef Broth”, adds to the beef flavour and no need to add any water. Oh yeah, you can add a small handfull of rolled oats and a cubed potato. Yummy in my tummy!
